A note about the cartilage origin. Fish that is used for the fish and chip shop industry is often called flake; its alternate name is gummy shark, a plentiful fish throughout southern Australia. The cartilage is excess in the process and we have found a use for it that is healthy and delicious for dogs. The Australian Fisheries Management Authority classifies this fish as ‘sustainable’ under its sustainability classification system.
